SOIL CHARACTERISTICS
partially clay core, heavy, partially deep with a strong amount of silt.

TRAINING SYSTEM
double inverted – density 3.000 plants/Ha

HARVEST
by hand - 2nd decade of September.

VINIFICATION
pressing of whole grapes in an environment without oxygen, through the use of CO2 at 16-17 °C for 7/8 days.

MATURATION
refinement in steel tanks with suspension of finer wine dregs. All transfer operations must take place with the use of CO2 in order to allow minimum use of sulfur, and sparkling wine process takes place in autoclaves reaching up to 1,5 atmospheres.

PERLAGE
fine and light, after a 30 day period in an autoclave.

COLOR
pale straw yellow with green reflections.

AROMA
a pleasant note of green tomato leaf, combined with spicy, floral citrus notes.

TASTE
fresh, pleasantly acidulous and tasty with a note of sour apple and a bitter aftertaste.

GASTRONOMIC MATCHES
pleasant both as an aperitif or for a beginning to end meal with light dishes such as appetizers, fish, crustaceans, risotto and poultry.
