HARVEST
by hand in 1st decade of October.

VINIFICATION
based on the vintages, the maceration process is prolonged for 15 days with frequent pumping.

MATURATION
the first refinement takes place in cement tanks for 2/3 months followed by at least 1 year of refinement. From 500lt, third generation, French oak barrels, to bottles then followed by a 6 months rest before marketing.

COLOR
deep red with copper reflections.

AROMA
fine, intense and complex, ethereal, elegant with a note of licorice jam which mixes with a touch of vanilla.

TASTE
nicely tannic, good structure and persistence.

GASTRONOMIC MATCHES
perfect from the beginning to the end of a meal, in particular with tasty first course dishes, roasts, game, noble poultry, goat and lamb and hard cheeses.
